Vintage Notes:
The 2024 growing season was desirable with a normal spring, bud break occurring in mid-April. The summer temperatures were moderate and consistent, providing a nice long, slow season for most crops. The 2024 vintage was exceptional in quality as it wrapped up with cool nights and warm days, providing ripe fruit with excellent acidity.

Fermentation:
At juice stage, we clarify with Bentonite, let sit for 2-4 days, then rack off settling lees and begin fermentation practices. We used our traditional Yeast Erbo-Ferm - German yeast strain in Stainless Steel tanks. To preserve natural Residual Sugar in the wine and maintain a medium sweet profile, the fermentation is stopped mid-way through and yeast cells are crashed via chilling and an SO2 addition. Wine is then cold stabilized and then racked off gross lees to ensure no further fermentation occurs.
